I’m a big fan of carrot cake and this is the best I’ve ever tasted. The cake is super moist and the icing makes a great combo.

The original version of this recipe calls for chochoyotes: simple bread dumplings cooked in your simmering soup. But there wasn’t enough liquid to properly cook the dumplings, so I’ve omitted them from this recipe.

I was hankering for this soup I had as a child. I remembered it was Jamaican and green and had these great thin dumplings that bobbed up and down. Shanika’s Immune-Boosting Green Veggie Swamp Soup is the closest I’ve found and it’s fantastic! The dumplings are spheres instead of cylinders, so I’ll try a different shape next time.

A Dutch baby is the pancake’s more presentable cousin. Also, you get to cook a big one at once instead of a bunch of single servings. But you need a bunch of pans to cook more than four people.

I’ve never liked tomato soup. I think I’ve only had it from a can and never enjoyed the intense sour flavours. I didn’t like tomatoes as a kid either, so maybe that’s what initially turned me off.
